Pumpkin Cheesecake Bar




1 1/2 cups all-purpose flour

1/2 cup butter

1/4 cup white sugar


8 oz cream cheese

1/4 cup white sugar

1 egg

1/2 teaspoon vanilla extract


1 (15 oz.) can pumpkin

1 (12 oz.) can evaporated milk

3/4 cup white sugar

2 eggs

3/4 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves


1. Preheat oven to 425 degrees

2. CRUST.  Stir flour, butter and sugar together in a bowl until dough is well-blended.  Pat dough on a 9×13 in baking dish.

3. Bake in the preheated oven until crust is lightly golden for 10-15 minutes.  Cool. Reduce oven temperature to 350 degrees.

4. CHEESECAKE LAYER.  Beat cream cheese, sugar, egg and vanilla with an electric mixer until smooth.

5. Whisk pumpkin puree, evaporated milk, sugar, eggs, cinnamon, salt, ginger and cloves in a separate bowl until ingredients are well blended and mixture is thin.

6. Spread cream cheese mixture evenly over cooled crust.

7. Pour pumpkin mixture evenly over cream cheese mixture.

8. Bake in the preheated oven until bars are set for 60 minutes.

9. Cool.  Leave in refrigerator over night fore best results.
