Summer is winding down, but here is an easy recipe to try.
YOU WILL NEED:
1 cup dried cous cous
1 (15 ounce) can kidney beans drained and rinsed
1 (15.25 ounce) can whole kernel corn drained and rinsed
1 (10 ounce) can diced tomatoes
1 tablespoon white vinegar
1 tablespoon brown sugar
1/8 teaspoon ground cumin
1/2 tablespoon onion powder
salt and pepper to taste
- Combine kidney beans, corn, tomatoes and cous cous in a salad bowl.
- In a separate bowl whisk vinegar, brown sugar, cumin, onion flakes, salt and pepper. Spoon liquid from kidney bean mixture into mixture if desired. Mix until brown sugar has dissolved.
- Pour dressing over bean and cous cous mixture to combine.
- Refrigerate at least 1 hour.
